Mexican wedding cakes are a traditional Christmas treat, but these delicate little cookies are not just for the holidays. They're easily made gluten-free by substituting traditional flour with gluten-free flour. The garbanzo bean flour combined with the powdered sugar makes them delicate like the traditional wheat cookies. The cookies pictured here are with cranberries instead of chopped nuts, but you can substitute with walnuts, pecans or pistachios. Kids love to roll the warm cookies in powdered sugar.
