Sweet Potato Paletas

There are very few things that can be as refreshing as a paleta. Kids love them and making them together can be fun, too. Try this sweet potato paleta recipe and enjoy the benefit of getting your daily dose of veggies while having dessert.

RECIPE: Sweet potato paletas

Yields 8 three-ounce popsicles

Ingredients

  • 1 pound sweet potatoes, cubed
  • 1 cinnamon stick
  • 2 cups whole milk (substitute coconut milk to make this recipe dairy-free)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, bring water to boil with a cinnamon stick.

  2. Add sweet potatoes to boiling water and cook until tender.

  3. Blend cooked sweet potatoes with milk, sugar and vanilla extract until you obtain a smooth mixture.

  4. Pour mixture into popsicle molds, leaving a little bit of room at the top for them to expand.

  5. Tap the molds lightly to ensure they are completely filled and to release any air bubbles.

  6. Freeze at least 2-3 hours before serving.
