Berry Cherry Coconut Breakfast Smoothie

Breakfast smoothies are a busy mom's best friend when you're always on the run in the morning but still need to make sure everyone gets fed. This recipe is packed with antioxidants, and is dairy-free, gluten-free and vegan-friendly.

For a shortcut, you can buy pre-frozen berries and cherries from the freezer section in the grocery store—just be sure to read the labels to check whether there's added sugar or other ingredients you may not want. The best part? You can blend and serve in about five minutes, rinse the blender and be out the door on time!

RECIPE: Berry Coconut Breakfast Smoothie

Yields two servings

Ingredients

  • 1 cup frozen mixed berries
  • 1 cup pitted and frozen red cherries
  • 1 14-ounce can of full-fat or low-fat coconut milk
  • 1 sliced and frozen banana
  • 1/4 cup finely shredded, unsweetened coconut (optional)

Directions

  1. Add ingredients to blender in this order: coconut milk, mixed berries, cherries, banana and optional shredded coconut.
  2. Blend on high until completely smooth.
