Is it just me, or is there always too much "apple" in those ubiquitous candy apples? Because quite frankly, once the candy's gone, I'm basically looking at a piece of fruit on a stick—which is not what I'm going for when that sweet tooth strikes. Feel the same? If so, you are going to love these candy apple pops!
Thick apple slices are dipped in your choice of chocolate and sprinkled with your choice of toppings.
I went with s'mores, samoa and cookies 'n' cream, but the sky's the limit! This is a super fun project to do with the kids, and even the littlest hands will have fun dipping and sprinkling.
Apple-picking season is upon us, and—let's face it—there's only so much applesauce you can make, right?

Candy Apple Pops
4 medium to large apples
Assorted chocolate chips: semi-sweet and/or white
Assorted toppings: mini marshmallows and chopped graham crackers (for s'mores); caramel sauce and toasted coconut (for samoa); crushed Oreos (for cookies 'n' cream)

1. Wash and dry the apples; slice each into four 1/2"- to 3/4"-thick slices. Remove seeds.
2. Use a small paring knife to make a slit in the bottom of each slice; insert a popsicle stick. Thoroughly dry both sides of each apple slice and place on parchment-lined baking sheets.
3. Melt your choice of chocolate in the top half of a double boiler set over barely simmering water. Working with one apple slice at a time, use a spoon to coat all sides with the melted chocolate. Tap the stick gently on the edge of the bowl to remove excess chocolate and level the surface; return to your baking sheet and sprinkle with your choice of toppings. Refrigerate to set.
4. Once the chocolate is set, drizzle with your choice of more melted chocolate or caramel sauce. Keep refrigerated for up to two days.
