Recipe Rescue: Post-Gluttony Salads

It is every American’s right, nay, duty to overeat on Thanksgiving. Did you do your part? I sure did.


Once all of the leftovers were turned into savory pot pies and spicy, turkey enchiladas, and I got over my indigestion, I began to think damage control. Maybe ‘damage’ is the wrong word — I should say ‘balance’ control.

I’m all for overeating on Thanksgiving, (like I said, I feel that it is my duty), but I also like a good salad. I totally look forward to a great salad in the weeks between gigantic holiday feasts. More than just easing the guilt-o-meter, they are the perfect foil to buttery, mashed everything and warm, roasted whatnots.

Here are some crisp, but not too austere, salads to get us all back on track. You know, just in time for December parties and feasts.
