25 Days of Cookies: Shortbread

My daughter is 9 and can make this delicious cookie unsupervised. It's that easy. Plus there's no chilling the dough so impatient cooks don't need to wait around before cutting the cookies into whatever shape they like. You can also roll the dough into little balls and press down with the prongs of a fork (creating nice little grooves to capture powdered sugar). We don't ice these but there's no reason not to. A simple sugar icing would be perfect here (we've got a good recipe for one here).

RECIPE: Shortbread Cookies

Yields 2 dozen cookies

Ingredients

  • 1 cup sugar

  • 1 cup of butter

  • 2 cups of plain flour

Directions

  1. Cream butter and sugar.
  2. Add flour, mix thoroughly.
  3. Lightly flour tabletop and shape dough into a ball. Roll out to 1/4 inch thick. Cut into whatever shape you like. Prick with fork and place on greased cookie sheet. Bake for at 250 degrees for 45 minutes until the tops are light brown.
