25 Days of Cookies: Lu's Spice Cookies

We like to experiment in our kitchen and last year Lucinda decided vanilla cookies were boring. She tried adding sprinkles but they didn't look good. We had Pumpkin Pie Spice left over from Thanksgiving so she threw some of that in and – voilà! Delicious spiced holiday cookies. So good. So easy. Perfect for a teachers gift.

RECIPE: Lu's Spice Cookies

Yields 2 dozen cookies


  • 3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon Trader Joe's Pumpkin Pie Spice
  • 1/2 teaspoon salt
  • 2 sticks unsalted butter
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract


  1. Whisk together the dry ingredients (flour, baking powder, salt and Pumpkin Pie Spice) in a large bowl.
  2. Beat butter and granulated sugar with a mixer on medium-high speed until pale and fluffy.
  3. Beat in egg and vanilla. Reduce speed to low. Add flour mixture, and beat until combined.
  4. Using your hands roll dough into 1-inch balls and arrange on lined baking sheets, about 1 inch apart. Press a fork into each cookie to get the striped effect.
  5. Bake at 350 for 12 to 14 minutes. Keep an eye on them – you want them golden around the edges. Not too brown or they get very crisp!
