What is the best advice you ever got from your dad (cake or otherwise)?

My dad was always striving to make the bakery bigger and better, and he pushed me harder than anyone else. He always told me that if I wanted to be the best, have the best bakery in town, I had to work harder than everyone. Going the extra mile on everything I did became the norm for me growing up.

We talk a lot about the work/home balance at mom.me. You're such a busy guy—how do you make time for your wife and kids and keep a balance?

Finding that balance is definitely easier said than done, but family is everything to me. So I make sure to find the time, no matter how busy I get. Like, if I know I'm going to be traveling for awhile, my wife and I plan when she and the kids can meet me on the road, and I'll block off certain months and weekends to spend just with them.

Do you have a favorite cake?

You know, I don't. I like everything! In the summer, there's nothing better than a slice of strawberry shortcake. But right now, in the winter, I've been craving our pumpkin pie.

Give us your best pro tip.

For baking, I would say to pay attention to the recipe—the measurements and timing. Baking is a science; if the formula is off, you're not gonna get the result you want. For decorating, a lot of home bakers don't give enough time for the cake or cupcakes to cool before decorating. That's so important so the cake doesn't crumble on you when you start to frost the cake.
