It’s that time of year again when pumpkin spices lattes are abounding and what better way to get your taste of fall then by coupling it with this Pumpkin Pie Waffle recipe. SideChef, the step-by-step cooking app that soared to the Top 10 spot in the Food and Drinks category in the first week of its iPhone launch, is getting in the spirit this autumn with their bloggers.
SideChef has over 100 top chefs, bloggers and partners including Le Cordon Blue currently on the app. Margaret Bruno Metzger of Margaret’s Dish is one of the many bloggers who have signed onto the app to share seasonal recipes such as this Pumpkin Pie Waffle Recipe:
RECIPE: Pumpkin Pie Waffles
dairy free, with gluten free and vegan options
2 cups oat flour (use certified gluten free oats to make gluten free)
2 tsp baking powder
1 Tbsp cinnamon
1/4 tsp salt
1/4 tsp cloves
1/2 tsp ginger
1/2 tsp nutmeg
1 cup organic pumpkin puree
1 cup unsweetened almond milk (or non dairy milk of choice)
1/2 cup orange juice
2 eggs (use two egg replacements to make vegan)
1 Tbsp coconut oil, melted
Oil for greasing the waffle iron
Toppings of your choice: I used pumpkin seeds, maple syrup, and a sprinkling of cinnamon
Combine all dry ingredients in a bowl and mix well.
Whisk together wet ingredients in a separate bowl.
Fold dry ingredients into wet until combine, and cook according to the instructions of your waffle maker.
