Coconut Lover's Cake in a Mug

Coconut has really grown in popularity, and now it’s available in so many forms.If you adore coconut, this cake is a coconut trifecta: coconut milk, coconut flakes,and coconut water.

RECIPE: Coconut Lover's Cake


  • 4 tbsp (30g) all-purpose flour
  • ¼ tsp baking powder
  • 2 tsp granulated sugar
  • 2 tbsp (30ml) coconut milk
  • 1 tbsp (15ml) coconut water
  • 1/2 tbsp (7.5ml) vegetable oil
  • 1-1/2 tbsp (7.5g) sweetened coconut flakes

TOPPING AND DECORATION, optional (serves 2)

  • ½ cup (120ml) heavy whipping cream
  • 2 tsp granulated sugar
  • 1 tbsp (5g) sweetened coconut flakes


  1. Combine all ingredients except coconut flakes in an oversized microwave-safe mug.
  2. Mix with a small whisk until batter is smooth. Stir in coconut flakes.
  3. Cook in microwave for about 1 minute. If cake is not done, heat an additional 15 seconds. Let cake cool a few minutes.
  4. If desired, place the whipping cream and sugar in the mixing bowl of stand mixer (or use a handheld mixer) and mix on high speed until peaks form. Top the cake with the whipped cream and sprinkle the coconut flakes on top. Cake is best consumed while still warm or within a few hours of being cooked.
