Coconut Mint Chip Smoothie

It's no secret that the mom.me team loves juice. We all have our favorite flavor combinations for our juicers at home, so when we received a copy of JUICE: Recipes for Juicing, Cleansing & Living Well from the founders of Pressed Juicery, we were ecstatic. Pressed Juicery makes some of our favorite juice and we couldn't wait to try some of their classic recipes for ourselves. From juices, to smoothies, to nut milks, the book is full of all things fresh and delicious.

They shared this recipe for a Coconut Mint Chip Smoothie with us, and it really does taste like mint chocolate chip ice cream. It's jam-packed with hydrating coconut, fresh mint, and cacao nibs to give it that classic "mint chip" look.

RECIPE: Coconut Mint Chip Smoothie

Yields 1 to 2 16-ounce servings


  • 2 cups coconut water
  • 1⁄2 avocado, pitted and peeled, or meat from 1 raw, young Thai coconut
  • 5 fresh mint leaves
  • 1 tablespoon cacao nibs
  • 3 or 4 ice cubes


  1. Put all the ingredients in a high-speed blender and blend on high until smooth.
