They shared their recipe for a Baby Power Greens with Shredded Chicken and Tart
Cherry Vinaigrette Salad. It's designed to give you endurance for your workout or even a really busy day. Tart cherries are high in antioxidants. Studies have shown that runners who consume tart cherry juice twice a day have notably less muscle pain after long distance runs. Baby greens are high in fiber, antioxidants, vitamins A, K, B6, calcium, and iron. Anti-inflammatory properties and supports bone strength.
RECIPE: Baby Power Greens with Shredded Chicken and Tart Cherry Vinaigrette
Yields 1 salad
2 Cups of mixed baby power greens (kale,spinach, chard, etc)
3 oz Shredded chicken
1/8 Cup dried tart cherries, chopped
2 Tablespoon walnuts, chopped
½ Apple, rough chop
Tablespoons of olive oil
1 Tablespoon tart cherry juice
½ Tablespoon balsamic vinegar
Dash of salt & pepper
Mix all dressing ingredients together.
Toss the dressing with the mixed baby greens. Plate the
