The mojito is a light, refreshing cocktail made with white rum and flavored with fresh mint. To mix a mojito, place four mint leaves in the bottom of a tall cocktail glass and add the juice of one lime and 1 tsp. of confectioners sugar; muddle or mash with the back of a spoon. To this mixture add ice to fill the glass, 2 oz. of white rum and stir; top with club soda and garnish with mint. Try using half mint leaves and half basil leaves for a new twist on this classic.
Break out the blender and the strawberries and make sweet, smooth daiquiris instead of dessert after dinner. To make a strawberry daiquiri place six fresh strawberries, 1/2 cup ice, 2 oz. white rum, 1/2 oz. squeezed lime juice, and 1/4 oz. simple syrup in a blender and blend on high for 30 seconds. To use frozen strawberries, reduce the amount of ice by half. Garnish with a fresh strawberry and whipped cream.
A pina colada is a rum-based cocktail that relies on coconut and pineapple flavors to give it its tropical flavor. To mix a pina colada, combine 3 oz. of light rum, 3 tbsp. pineapple and 3 tbsp. coconut milk; blend at high speed for 15 or 20 seconds, strain into a tall cocktail glass and garnish with a maraschino cherry and a slice of pineapple. To add even more island flavor, use coconut-flavored rum in place of light rum.
Rum and Cola
You can't talk about rum drinks and not mention the most ubiquitous of all -- rum and the cola of your choice. Mix 1 1/2 oz. dark rum and 5 or 6 oz. cola in a glass, add plenty of ice and a twist of lemon or lime and serve.
