Pesto Chicken Lasagna Roll-ups

Who doesn't love lasagna? It's warm, delicious and super satisfying. Now using store-bought rotisserie chicken you can make it easily. Only 5 ingredients stand between you and an amazingly easy and tasty dinner!

RECIPE: Pesto Chicken Lasagna Roll-ups

Prep Time: 10 minutes

Cooking Time: 30 minutes


  • 2 cups rotisserie chicken
  • 1/4 cup + 2 tablespoons pesto sauce
  • 8 lasagna noodles
  • 1 jar (24 oz) marinara sauce
  • 2 cups shredded Mozzarella cheese
  1. Heat oven to 375° F.
  2. Cook the noodles according to package instructions.
  3. Drain the noodles well, placing over the side of the colander to prevent sticking.
  4. Place the chicken into a medium bowl.
  5. Mix 1/4 cup pesto sauce with the chicken.
  6. Place the tomato sauce into a medium bowl and stir in the remaining 2 tablespoons of pesto sauce.
  7. Pour about 1/4 of the sauce in the bottom of an 8 x 8 baking dish.
  8. Place one lasagna noodle on a clean dry surface.
  9. Divide the chicken into 8 equal portions.
  10. Place one portion of chicken onto one end of a lasagna noodle.
  11. Sprinkle about 1 teaspoon of cheese onto the chicken.
  12. Carefully roll the noodle up, tucking in any bits of filling that fall out.
  13. Place the filled noodle seam side down into the dish.
  14. Repeat with the remaining noodles, chicken and cheese.
  15. Spoon the remaining sauce over the rolled lasagna.
  16. Sprinkle the remaining cheese over the sauce.
  17. Cover the dish with foil and bake for 20 minutes.
  18. Remove foil, bake an additional 10 minutes, until the cheese is browned slightly.
