Rotisserie Chicken, Heirloom Tomato and Feta Salad Recipe

Re-purpose that leftover rotisserie chicken with ripe summer tomatoes, feta cheese and fresh herbs. A simple but very flavorful main dish salad.

Recipe: Rotisserie Chicken, Heirloom Tomato and Feta Salad

Yields 2


  • 3 – 4 heirloom tomatoes, sliced
  • 3 ounces crumbled feta cheese
  • 2 cups rotisserie chicken
  • 1/4 cup white balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh oregano leaves


  1. On a large plate or platter arrange the tomato slices.
  2. Sprinkle the feta cheese and chicken over the top of the tomatoes.
  3. In a small bowl whisk together the vinegar, olive oil, thyme and oregano leaves, until thickened slightly.
  4. Pour the dressing over the salad.
  5. Serve immediately.
