1/4 cup sugar
1/2 cup fresh squeezed lemon juice (from two large lemons)
3/4 cup fresh mint leaves, plus additional for garnish
1/4 cup vodka
1/2 cup white wine
4 ounces club soda
1. In a saucepan combine sugar, lemon juice and 3/4 cup fresh mint leaves. Simmer until sugar has dissolved, stirring occasionally with wooden spoon.
2. Remove pan from heat and allow to cool. Discard mint leaves.
3. Fill a cocktail shaker with ice. Add lemon mint syrup, vodka and white wine. Shake mixture and pour into four cocktail glasses.
4. Top each with club soda and garnish with a sprig of mint.
