Fluffy 'Fooled Ya' Pancakes


2 cups all-purpose flour

2 tablespoons baking powder

1/3 cup sugar

1/3 cup ground flaxseed

2 eggs

6 tablespoons butter

1 1/2 to 2 cups milk (depending on how thick you like your cakes)


1. Combine flour, baking powder, sugar and flaxseed in a bowl.

2. Whisk eggs.

3. Melt butter.

4. Mix butter, then eggs, with milk.

5. Stir wet ingredients into dry until just combined. Let sit for 5 minutes, then cook cakes in a hot pan with melted butter and serve with Maine maple syrup or confectioner's sugar!
