A cold, healthy snack is just what we need during the summer.
And what’s better than homemade popsicles? My favorite flavor paleta is coconut and I’m
always tempted to make them over and over again, but the kids ask for different
flavors so I decided to try making a layered paleta with three
flavors—including coconut, of course! The other two flavors are my favorites as
well: Mango and pomegranate. It’s sometimes hard to find fresh pomegranate, so
to make it easier, I used 100 percent pomegranate juice.
These layered paletas take a little more time than regular,
one-flavor popsicles but the result will be worth it. There will be at least
one flavor that everyone loves!
POMEGRANATE, COCONUT AND
For the pomegranate layer:
2 cups 100 percent pomegranate juice
1/3 cup coconut milk
2 teaspoons honey
For the coconut layer:
1 cup coconut cream
1 cup coconut milk
1/4 cup honey
1/2 cup sweetened coconut flakes
For the mango layer:
2 1/2 cups diced mango
1/2 cup coconut milk
1/4 cup honey
Heat the pomegranate juice in a small saucepan over very low
heat. Pour the honey and the coconut milk into the pan and stir. Heat until the
ingredients are mixed well, but do not boil. Remove from heat and set aside.
Pour the pomegranate mix into the paleta molds, filling the molds
1/3 of the way full. Place them in the freezer and wait until they harden, at
least one hour.
Place the coconut
cream, coconut milk, honey and coconut flakes in the blender. If you want to
add texture, leave some of the flakes out of the blender and stir in by hand
after blending. Pour the coconut mix into the paleta molds, making sure to
leave enough room for the mango mix coming next. Let them freeze.
Place the mango, coconut milk and honey in the blender,
blend well and pour over the coconut layer into the paleta molds. Wait for them
to freeze well and enjoy!
