For this refreshing twist on the classic mojito, use the best ingredients you can find, such as Sonoma Syrup Co. lime simple syrup and a premium ginger ale, like Fever Tree.
1/2 pound watermelon cubed and seeded (or approximately 2 thick slices, cubed, with rinds removed
1/4 cup lime simple syrup
4 ounces white rum
10 fresh mint leaves, plus two additional sprigs for garnish
4 ounces premium ginger ale
1. Using a mortar and pestle, muddle mint leaves and set aside.
2. In a blender, combine watermelon, lime simple syrup and white rum. Add mint leaves, and stir to combine.
3. Pour between two ice-filled cocktail glasses and top with ginger ale. Garnish with fresh mint sprigs.
