Halloween Stuffed Pepper Pumpkins

Before your little ghosts and goblins get sugared up this Halloween, line their stomachs with this cute and super-healthy snack. Substantial enough to make a meal for trick-or-treaters, these stuffed peppers are also a great idea for a side dish or Halloween party appetizer. Packed with whole grains and topped with mozzarella, they're bound to be a hit on any Halloween buffet.

For the filling, feel free to make your own blend of grains. We love the variety of textures from the Trader Joe's Harvest Grains Blend—a mixture of Israeli couscous, red and green orzo, spilt dried garbanzo beans and red quinoa. It's a perfect combination of soft and chewy from the couscous, orzo and quinoa, with a crunchier texture from the garbanzo beans. But any blend of grains will do the trick. (Or treat.)


4 orange sweet bell peppers

1 1/4 Trader Joe's Harvest Grains Blend (or your own blend of grains)

4 slices buffalo mozzarella cheese

1 3/4 cup chicken broth

1 tablespoon butter

pumpkin carving tools (we used Pumpkin Masters Pumpkin Carving Kit)


1. Preheat oven to 375 degrees.

2. Wash peppers throughly, slice tops off with stems and clean the insides.

3. Using the carving tools, have fun creating jack-o'-lantern faces on the outside of the peppers! For inspiration, check out our free pumpkin carving templates.

4. Bring 1 3/4 cups chicken broth to a boil. Add 1 tablespoon of butter, and stir in grain blend. Bring back to a boil, reduce heat and simmer, covered for 10 minutes.

5. Remove from heat and fill peppers to the brim with grain blend.

6. Top each with a 1/4-inch thick slice of buffalo mozzarella cheese.

7. Bake for 25 minutes or less time for a crunchier pepper.
