Chipotle fans have heard this too many times: "Guacamole is extra—is that OK?" For lovers of the fast-casual restaurant, the guacamole is always worth the extra two dollars, but you can now get your Chipotle guacamole fix at home.
The company released their top secret recipe over the weekend, and we promptly ran to stock up on all the Hass avocados we could carry.
The recipe doesn't look too different from a traditional guacamole recipe, but we're not going to question it. The recipe below is for a single serving, but they say they use 48 avocados in each batch (multiple times a day) in stores!
There's no secret ingredient here (maybe it's just magic that exists only in stores), but we love that they also provided the exact instructions that their employees use to make the green gold.
Check it out:
2 ripe Hass avocados
2 tsp lime juice
2 tbsp cilantro (chopped)
1/4 cup red onion (finely chopped)
1/2 jalapeño, including seeds (finely chopped)
1/4 tsp kosher salt
Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside.
Cut the avocado in half and remove the pit (carefully!)
Scoop out the avocado halves and place in a medium bowl.
Toss and coat with lime juice.
Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.
Fold in the remaining ingredients and mix well.
Taste the guacamole (over and over) and adjust seasoning if necessary.
